Tonight For Dessert....

Tonight after dinner I will be eating a slice or maybe the whole of this... 
 

All the way from Julian, California, an "Apple Mountain Berry Pie" from 'Julian Pie Company'
I can't wait! Its one of my favorites. 
Baked to perfection, fresh and soooooo yummy!

 We also stopped by and picked up some candy from The Candy Basket and we purchased some yummy treats! Cherry Sour Balls, Rock Candy, Cordial Cherries, Orange Sticks and FUDGE!

A Savory Treat At Savory Deli & Market

My Mum, Brenda, Carla, and I attended the grand opening of Savory Deli & Market today for !
If you are ever in the San Diego check out this lovely little shop. Savory specializes in lots of favorites tastes and items from places like Italy, Spain and (yes my favorite) France. The deli consists of fine imported meats and cheeses. The market has items from Italian pastas to jars of olives and anchovies. The market also includes lady fingers, olive oils, gifts, and much more. The staff and owners are friendly and helpful a great experience.


For lunch we sat outside on the patio and enjoyed lunch. We are so lucky to live in San Diego and be able to enjoy patio lunches. 
I had the Gnocchi In Tomato-Basil Sauce. Gnocchi is a imported Italian potato dumplings, very delicious and the tomato basil sauce had the perfect amount of flavor and also had halved Gaeta olives which had a sort of sweet flavor to me. But anything topped with fresh basil is always excellent to me.


My Mum had a Prosciutto {Mom this is for you (pro-SHOOT-toe)} sandwich with mozzarella and basil. I took a bite and it was very yummy with fresh ingredients.

Adobo Chicken Recipe By Sam The Cooking Guy

Finally!! I've been able to make Adobe Chicken by Sam The Cooking Guy.
I posted about a week ago about how I was going to make it and I also picked up the ingredients, but then, like always the week got busier and busier!

The Cooking Guy website it is streamlined and simple to navigate making it easy to find the perfect recipe for your cooking adventures. Adobo Chicken recipe by Sam The Cooking Guy
Oh my god! This is so good it could easily be the national dish of the Philippines (and Sam the Cooking Guy).

Ingredients
* 2 pounds chicken thighs
* 1 cup soy sauce
* 1/2 cup white vinegar
* 1 tablespoon fresh ground pepper
* 2 tablespoons brown sugar
* 5 garlic cloves, minced
* 3 bay leaves

Steps
1. Combine soy, vinegar, pepper, brown sugar, garlic and bay leaves in the bottom of a large pot.
2. Place chicken skin side down in pot and bring to a boil.
3. Immediately turn down to a simmer and cover with lid
4. After 30 minutes, remove lid and turn chicken over and simmer for an additional 20 - 30 minutes
5. Serve with steamed rice

Here we go, The final plating!
I served it with rice and broccoli.
The sauce boiled down into a reduction, which is always a yummy thing to me. It was simple to prepare and not a lot of dishes to wash up!! (awesome!) The chicken came out tender and moist. I felt that maybe next time I would use a lower sodium soy sauce. But all in all I really enjoyed it. I'd really like to pick up one of or all of Sam The Cooking Guy's cookbooks and see what other recipes are yummy.

Mini Tacos
So easy, so tasty and light and healthy!

What you need:
Mini corn tortillas
Chopped up white onion and cilantro, mixed together
Carne asada and or chicken (marinated in a fajita type marinade), cooked and chopped
Hot sauce
Guacamole or avocado chopped
Salad side
Chips and salsa side
And a good company of friends!

Cheating With A Bread Maker?

Is using a bread machine cheating?
I hope not!
There is nothing else I love more than fresh baked bread! The smell, taste, and sort of cozy comfort it delivers. But I don't really have the know how to make it perfect like from a little bakery on Chaussée d'Ixelles in Belgium, unfortunately that's a bit far from my little home in San Diego...
And sure I could just find a bakery here but it just takes away all the fun of wearing a bit of flour on your clothes and in your hair.
I've made bread from scratch before the measuring exact ingredients, mixing,  kneading, rising, blah-blah-blah. Yes, having the Kitchen Aid Mixer really helps, but still I can't get it just perfect!

So tonight as I type this out... I am attempting my first bread machine bread!
Thanks to my Mommy Debbie ♥, lending us her Welbuilt bread machine I've added the ingredients, pushed a few buttons, and let it do its thing.

Hopefully if everything goes o.k., we will be enjoying a two pound fresh, french baked bread with medium color crust! Can't wait!

A Salad Here And There...

Eating healthy and exercising may be a new thing to us, and its not really a new years resolution or anything, but I think that...
Matt and I have realized a salad here and there makes you feel a bit better than a hamburger or two!

At BJ's Brewhouse this evening we split a really great tasting salad, I love how they chop their salads and I love a good salad with lots of veggies and a balsamic vinaigrette!

We split the

"GARDEN MEDLEY SALAD -
Crisp romaine lettuce, artichoke hearts, fire-roasted red peppers, tomatoes, red onions, feta cheese, and our balsamic vinaigrette dressing. Available with grilled chicken, Cajun shrimp, flame-broiled or blackened salmon."

So I failed and forget to capture a photo... but trust me its real yummy, healthy salad!

And on a more un-healthy note I ended the meal with a personal Pizookie! I couldn't resist! But it was personal size soooooo it wasn't that big! Ha Ha Ha!

And again failed on the photo, but that's because I devoured it before it almost reached the table!

Coincidence Bread Pudding

While on my trip I ended up having Bread Pudding a few times,
a coincidence, I suppose... well probably not...
Bread Pudding is a simple recipe using ingredients you probably always have in your kitchen.


I added a few things raisins and a can of pears (no juice) cut up.
I would have loved to have it with a custard (but being a bit lazy) just used some whipped cream instead. I baked it a little longer so the top was nice and crusty.
It was really nice, easy to prep, warm and tasty.

Bread Pudding II

"This lightly spiced, extra thick bread pudding really hits home. We suggest using a rich egg bread or a moist white loaf in this recipe"
Ingredients:
6 slices day-old bread
2 tablespoons butter, melted
1/2 cup raisins (optional)
4 eggs, beaten
2 cups milk
3/4 cup white sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Directions:
1.
Preheat oven to 350 degrees F (175 degrees C).
2.
Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.
3.
In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
4.
Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

What Is Your Favorite Cookbook? And A Look At 'Jamie's America'

I just finished reading 'Jamie's America' Written by Jamie Oliver, I absolutely loved it.






This book takes a look at New York, Louisiana, Arizona, Los Angeles, Georgia, and The Wild West. Each chapter has their own style of food and people to match. 'Jamie's America' was really interesting and was neat to see the history of each area and its distinctive  tastes. In the opening of each chapter, there was a little story about Jamie Oliver's travels through that area.
As I read each beginning and then browsed each recipe that followed, each chapter made me excited and couldn't wait to read the next chapter. 
Also the Photos in this book, by David Loftus, were absolutely amazing!



The book also made me want to travel across America, Dining and Devouring great food along the way. I'm really looking forward to cooking out of the book and I'm sure I'll post that in the future.

'Cité du Dragon'

The night before I left Belgium, the family and I went out to one of my most favorite restaurants, 'Cité du Dragon'. Not only is the food amazing but the atmosphere is unbelievable. I can't even to begin to explain how amazing and beautiful this place is. I have yet to enjoy a lunch there out on their beautiful patio but when I do I'm sure I'll fall more in love with this place. Just check out their 'Cité du Dragon' website its also really neat too.

When you first walk in there is a beautifully decorated bar and lounge area, with yes, Fish in the floor! Its a large glass floor with big coy fish swimming in and out, under the floor, to their out door pond. As you walk outside by the coy fish pond there is an array of beautiful plants, statues and walk ways! It leads to a whole garden of treasures. Back inside every table is set to perfection and also has a bowl of yummy prawn crackers on them.


 
 

For dinner we had a "Chinese Fondue". It was a large double sided pot over a burner and had a chicken stock and a spicy stock we added meat, vegtables, and noodles till cooked then we had these special spoons we used to take out our food for eating.

Their website explains it as "You dip finely cut slices of pork and beef fillet, pork kidney, chicken, angler, ink-fish and scampi in a boiling Chicken broth. The whole thing is served with carefully selected vegetables and a choice of sauces. This dish, also known as Ta Pin Lou (the battle around the fire), is a typical northern Chinese dish."

It was really neat to cook, and fish out your dinner. It was very similar to having Phở, which is a Vietnamese beef and noodle soup. The soup includes noodles made from rice and is often served with basil, lime, bean sprouts and peppers that are added to the soup by the customer.

I really enjoyed doing this and I can't wait to try it out with my friends.


 
 
 
 

For dessert we had this apple thing which was absolutely delicious! It even came with a show. A man came out with a platter of apples that had been dipped in a batter then coated in a melted sugar then dropped into a bowl of ice water to harden. Then when those were all plated he took the left over sugar and drizzled it over the water to create a beautiful design of edible golden sugar.
