Happy Easter With Deviled Eggs

For Easter I made deviled eggs! Inspired by Food Networks spread in their April magazine, I set out to make a few kinds and ended up making four kinds.
With a little help from this fabulous website http://www.deviledeggs.com/, I was able to create these lovely, delicious, deviled eggs.

All of them were great but my favorite were the Spicy Deviled Eggs and the Apple Deviled Eggs.

One Really Yummy Hamburger

So I've been so busy! Flipping through my camera and gmail I keep coming across pictures of food I need to post!

Like this one:

Chipotle Corn burger from the June 2010 Food Network Magazine, is a simple burger with a lot of flavor and a bit of a spicy kick. I loved it! It was a bit different from the ole' hamburger recipe. I loved the roasted corn and bell pepper relish. I thought the chipotle mayo was a bit spicy at first but that can be fixed by not adding as much chipotle peppers. The flaky bun was perfect to use for this recipe.

26. Grilled Lightly mix 6 ounces ground beef chuck with a big pinch of kosher salt. Form into a ball, then shape into a 3/4-inch-thick patty; make an indentation in the center. Preheat a grill to high; brush the grates and burger with canola oil. Season the patty with salt and grill about 4 minutes per side. Serve on a grilled bun.

31. Chipotle Make Grilled Burger (No. 26). Add 2 slices jack cheese in the last minute of cooking (cover to melt). Mix 1/4 cup mayonnaise, 1 tablespoon minced chipotles in adobo and a splash of lemon juice. Serve the burger on a roll with chipotle mayonnaise and avocado.

32. Chipotle Corn Toss corn kernels and sliced bell pepper with lemon juice, olive oil and salt. Make Grilled Burger (No. 26), but sprinkle with ground cumin before cooking. Serve on a crusty bun with chipotle mayonnaise (No. 31), the corn salsa, onion, tomato and cilantro.

Mousse Slice Dumping On The Table Fiasco!

Tonight I made Lemon-Blackberry Mousse!

Everything was okay until I tried to transfer it! Luck-ally I had Morgan to capture the whole slice dumping on the table fiasco! 

I got April Food Network Magazine and flipping through it came to a picture and a recipe Lemon Raspberry Mousse Squares.
Making it for dessert was easy, serving it not so easy. Maybe it hadn't set right, or maybe it was because I put it in a round form spring pan instead of a square pan, but it might be because I made it with all fat free ingredients...
Ahhh, We will never know!
But even though it was a mess it still was yummy! It was very delicious, creamy and it had a lovely array of fresh fruit! The fat free ingredients made it healthy which is always a good thing. Yep, I'll be making it again.
Also its not a typo I made it with blackberry jam even though it asked for raspberry, I was out of raspberry.

What You Need!

48 NILLA Wafers, divided
3/4 cup boiling water
1 pkg. (3 oz.) JELL-O Lemon Flavor Gelatin
1 cup ice cubes
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup sugar
2 tsp. lemon zest
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1/3 cup raspberry preserves
1-1/2 cups fresh fruit

Make It!

STAND 16 wafers around edge of plastic wrap-lined 8-inch square pan. Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Stir in ice until melted.

BEAT next 3 ingredients in large bowl with mixer until blended. Gradually beat in gelatin. Whisk in 2 cups COOL WHIP.

POUR half the gelatin mixture into prepared pan; cover with 16 wafers. Microwave preserves on HIGH 15 sec. or until melted; brush onto wafers. Top with remaining gelatin mixture and wafers.

REFRIGERATE 4 hours or until firm. Invert dessert onto plate; top with remaining COOL WHIP and fruit.

Cool off with a 1/2-cup serving of this creamy dessert.
Variation
Prepare as directed, using JELL-O Strawberry Flavor Gelatin and strawberry jam. Garnish with sliced fresh strawberries.

Breakfast Pizza

When I got the new Food Network Magazine, I found a simple recipe for a Breakfast Pizza (page 113). 

What a neat idea! The photo in the magazine just looks amazing and tasty.
So this morning I created the breakfast pizza and added a bit of onion. I used olive oil infused with rosemary from Bree and Robbie's wedding, which really added a nice rosemary flavor to the crust. I did cook it on the pizza stone, which for this pizza I wouldn't do again because it made the crust too crunchy and then was a bit hard to cut... This is really a knife and fork pizza.

Pizza Dough
Whisk 3 3/4 cups flour and 1 1/2 teaspoons salt. Make a well and add 1 1/3 cups warm water, 1 tablespoon sugar and 1 packet yeast. When foamy, mix in 3 tablespoons olive oil; knead until smooth, 5 minutes. Brush with olive oil, cover in a bowl and let rise until doubled, about 1 hour 30 minutes. Divide into two 1-pound balls. Use 1 pound per recipe unless noted.
How to make a pizza:
Step 1: Place a pizza stone or an inverted baking sheet on the lowest oven rack and preheat to 500 degrees.
Step 2: Stretch 1 pound dough on a floured pizza peel, large wooden cutting board or parchment paper.
Step 3: Top as desired, then slide the pizza (with the parchment paper, if using) onto the stone or baking sheet. Bake until golden, about 15 minutes.

Bacon-Egg Breakfast Pizza -  
Stretch dough into four 6-inch rounds. Top each with diced raw bacon; bake until crisp (500*). 
Crack an egg onto each crust and top with olive oil, salt and pepper; bake until the eggs set (about 5 minutes). Top with baby greens.

Dinner For Mommy Blair And Friends

Today I made a dinner for my friend Blair, who just had a little baby girl.
I wanted to make something easy that could just be heated up when she wanted a bite to eat. 

Flipping through my new Food Network Magazine I came across a recipe, for Lasagna Marinara Rolls, courtesy of Anne Burrell. It looked simple and didn't seem really expensive. They looked like they could be reheated with no problem.


I bought extra ingredients to make some extra for Matt and I, but I had so much left over I invite a few friends by for a taste. Oh, also, I didn't add the pecorino cheese and the Parmesan cheese because I didn't have a copy of the recipe at the store, Instead I added a bit of cream cheese. Also, I added a bit of rosemary, basil, and Greek oregano from my garden to the filling. Also (hahaha) I did use jar marinara... Here is the recipe, It was very good, not hard to make, there were a lot to serve and I'll know tomorrow if it can be reheated. :)


Lasagna Marinara Rolls

Prep Time: 30 min, Inactive Prep Time:--, Cook Time: 3 hr 17 min, Level: Easy, Serves: 12 servings

Ingredients

For the Sauce:

  • 2 tablespoons extra-virgin olive oil
  • 1/2 cup diced pancetta (about 2 ounces)
  • 1 large Spanish onion, diced
  • Kosher salt
  • 2 cloves garlic, smashed
  • Pinch of red pepper flakes
  • 2 28-ounce cans San Marzano plum tomatoes

For the Lasagna:

  • Kosher salt
  • 1 16-ounce box lasagna noodles
  • 4 cups ricotta cheese
  • 2 tablespoons grated pecorino cheese
  • 1/2 cup grated parmesan cheese
  • 3/4 pound mozzarella cheese, shredded (about 3 cups)
  • 2 large eggs
  • 5 sprigs fresh thyme, leaves roughly chopped

Directions

Make the sauce: Pour the olive oil into a large pot, add the pancetta and cook over medium-high heat until golden brown, 4 to 5 minutes. Add the onion, season generously with salt and cook until soft but not browned, 6 to 7 minutes, stirring frequently. Add the garlic and red pepper flakes and cook 2 to 3 minutes, stirring.

Pass the tomatoes through a food mill (or puree in a food processor) and add to the pot. Fill one of the empty tomato cans with about 2 1/2 cups water, add to the pot and season generously with salt. Simmer 2 to 3 hours, stirring occasionally. Taste frequently and season with salt as the sauce simmers-tomatoes take a lot of salt.

Make the lasagna: Preheat the oven to 375. Bring a large pot of generously salted water to a boil (the water should taste like the ocean). Add the lasagna noodles and cook until al dente, about 10 minutes. Fill a bowl with salted ice water. Remove the pasta from the boiling water and transfer to the ice water to stop the cooking. 

Mix the ricotta, pecorino, 1/4 cup parmesan, 1 1/2 cups mozzarella, eggs, thyme and
2 teaspoons salt in a bowl. Drain the pasta and place on a clean towel in a single layer.
Coat the bottom of a 9-by-13-inch baking dish with a ladle or two of sauce. Spread 3 heaping tablespoonfuls of the cheese filling down the center of each lasagna sheet; roll up the sheet (but not too tightly or the filling might ooze out). Place seam-side down in the baking dish, leaving a little room between each roll. Cover with 3 to 4 cups sauce and sprinkle with the remaining 1/4 cup parmesan and 1 1/2 cups mozzarella. 

Bake, uncovered, until the lasagna bubbles around the edges and the cheese melts, about 1 hour. Let rest 10 minutes, then serve with extra sauce.



 
It was really yummy!

Fresh-Mex Corn Wontons Recipe

This recipe was really yummy! I especially enjoyed the dipping sauce. A few things I did change were... 
1. I mixed the wonton filling with some cream cheese 
2. I used Franks Hot Sauce for the dipping sauce
3. Oh and I accidentally added cilantro in the filling, from mixing up the ingredients of the filling and the dipping sauce. Luckily I had more cilantro for the sauce.

Originally, I bought some wonton wrappers that were absolutely awful, they were yellow, really thin, tore and were not very good. The next day I found some that were perfect! They were whiter, thicker and almost like a samosa wrapper. These photos are of the better wrapper.

Ingredients

  • 3 ears corn, husked
  • 1 small lime
  • 1 1/2 cups sour cream
  • 1/4 cup fresh cilantro, finely chopped
  • 2 teaspoons hot sauce
  • Kosher salt
  • 36 square wonton wrappers
  • 2 plum tomatoes, diced (about 3/4 cup)
  • 1 medium avocado, diced (about 3/4 cup)
  • 1/2 cup finely diced red onion
  • Vegetable oil, for frying

Directions

Place the corn in a steamer basket set over a saucepan of simmering water. Cover and steam 8 minutes.
Meanwhile, grate the lime zest into a small bowl and squeeze in 1 tablespoon lime juice. Add the sour cream, cilantro, hot sauce and 1/4 teaspoon salt and mix well; set the dip aside. 
Remove the corn from the steamer basket and let cool slightly, then cut the kernels off the cobs. Combine with 1/2 teaspoon salt in a bowl. 
Line a large baking sheet with paper towels, then arrange the wonton wrappers on top in a single layer. Place 1 teaspoon corn, 1/2 teaspoon tomato, 1/2 teaspoon avocado and 1/4 teaspoon red onion in the center of each wrapper. 
Heat about 1 1/2 inches of vegetable oil in a large pot until a deep-fry thermometer registers 375 degrees (or place a wooden skewer in the oil to test the temperature; bubbles should form around it). 
Moisten the edges of each wonton wrapper with water, then fold in half diagonally to enclose the filling and form a triangle; press gently to seal. Working in batches, lower the wontons into the hot oil with tongs and fry about 1 minute. Flip and fry another 30 seconds, or until light golden. Transfer to paper towels to drain. Serve with the cilantro-lime dip.
